Great question to ask your shop..... but I'd guess book time is 1.2 or so.

If you have them removing parts that would be part of this job, they should cut some labor time from one job or another.... as you can only remove the front wheel once... so if they are doing it to change a tire.. and the calipers to change pads,...ect..

the whole front end of the bike is going to be off anyway,just 2 more nuts to take off and the triples will come out.
it takes longer to get it torqued and set up,than it will for them to take it off and put new ones in.
add another 30 to 45 mins for setting it up since they should know how to set these up properly.

Not sure what a YouTube video does for your statements above, proves anyone specific is working on your bike, or is anything more then a You Tube video on a pubic accessible network... But it's a good vid, so there is that.
